NALCO 1072 acts as a flexible fining agent for wine and juice. It provides the best combination of highly active fining capabilities with high concentration of active ingredients. Rapid clarification of haze can be achieved with relatively low levels of water addition. It can effectively remove phenolics and peptides in fruit wines and juices.

For clarification of fruit juices and wines, use NALCO 1072 in conjunction with gelatin to maximize removal of phenolic-peptide haze complexes. Add gelatin, mix, and then add NALCO 1072. Use a gelatin of low Bloom value. Suggested initial dosage: 5 pounds silica (1.65 gallons NALCO 1072) and 0.5 pounds gelatin (per 1000 gallons beverage). In general, gelatin should not be added last, to avoid haze formation.
