Yeast Lalvin BM4x4 - 50g

Lalvin BM 4X4 is a blend of BM45 and a complimentary strains chosen by Lallemand to provide all the advantages of BM45 with even greater reliability under difficult conditions.

The attributes of Lalvin BM45 with optimized fermentation capacity BM45 is known and appreciated around the world for its round mouthfeel and stable color (see above description for BM45). However, BM45 is a slow fermenter and can require substantial nutrients to complete fermentation successfully.

BM 4X4 releases a high level of esters responsible for fruit aromas. It also brings roundness to the mouthfeel and facilitates malolactic fermentation.

Lalvin T73 - 500g

T73 was isolated from the Valencia area in Spain and was selected for its ability to enhance the natural aromas and flavors of red wines produced in hot climates.

Due to its ability to produce high quantities of glycerol, wines made from T73 have good mouthfeel. Hot climate reds that have problems ”opening up” are enhanced by the well-balanced production of esters and higher alcohols.

This yeast has an extremely low nitrogen demand and quickly dominates the must’s indigenous microflora. It also exhibits good resistance to vineyard antifungal treatments.

Lalvin W15 - 10 Kg

W15 was isolated in 1991 from a high-quality Müller Thurgau must at the Viticulture Research Station in Wädenswil, Switzerland. 

This yeast was developed to ferment dry white and red wines at moderate speeds, where bright fruit and good structure are desired due to the production of higher levels of glycerol and succinic acid.

Very little heat is generated by W15 during fermentation, reducing the potential for formation of sulfide aromas and good osmotic tolerance has been noted for late harvest fermentations and icewine.

In white wines, Lalvin W15 helps retain bright fruit characters while optimizing mouthfeel and balance. It also performs well with both Pinot Noir and cooler climate Syrah.

W15 can also be used with Cider

The University of Valencia in Spain isolated Lalvin M69 from musts taken from the hot weather region of La Mancha.

Establishes itself quickly during fermentation. Nutrient supplementation is highly recommended in juices below 150 ppm YAN.

Notable for its ability to increase the aromatic complexity of neutral white varieties and for its tolerance of high sugar levels and shows a low conversion efficiency of sugar to alcohol, contributing high levels of glycerol with low acetaldehyde production.

Yeast Lalvin Opale - 500g

Lalvin ICV OPALE is the latest natural yeast selection from the Institut Coopératif du Vin (ICV). This yeast when compared with other yeasts develops more volatile aromatic compounds resulting in intense and complex fruit aromas in premium white and rosé wines.

Lalvin ICV OPALE also shows good fermentation abilities in the high maturity grapes coming from the Mediterranean and Rhône regions. Wines fermented with this yeast give the initial impression of volume and softness, followed by round, intense mid-palate and balanced finish.

This yeast shows good fermentation abilities from high-maturity grapes which might otherwise produce more neutral wine and optimizes positive aromas in difficult hot climate whites while providing intense fruit in premium white and rosé wines.

Known for fermenting fruity rosé wines and semi-sweet whites, Lalvin 71B was isolated by the INRA (National Agricultural Research Institute) in Narbonne, France.

Lalvin 71B is known for making blush and semi-sweet wines with a tropical fruit character. Long-lived aromas are due to its production of relatively stable esters and higher alcohols.

Lalvin 71B also softens high acid musts by partially metabolizing malic acid.

Lalvin BM45 - 10 Kg

Lalvin BM45™ is a relatively slow starter and is well suited for long maceration processes.

It produces high levels of polyphenol reactive polysaccharides resulting in wines with great mouthfeel and improved colour stability. It tends to contribute jam, spicy and earthy element to wines.

In addition, it has the capacity to reduce (mask) green vegetative characteristics in wine, whether varietal influenced such as Cabernet Sauvignon or due to an early picking regime.

Some winemakers use BM45 on Chardonnay as a blending component to increase mouthfeel.

Lalvin RC212  - 10 Kg

Lalvin Bourgorouge RC212 is a stellar yeast for producing Burgundy style Red Wines. Due to the limited polyphenol adsorption on its cell wall, this yeast promotes the stabilization of the color and tannins during fermentation.

The RC 212 is recommended for red varieties where full extraction is desired. 

Lighter red varieties also benefit from the improved extraction while color stability is maintained throughout fermentation and aging. Aromas of ripe berry and fruit are emphasized while respecting pepper and spicy notes.

RC212 consistently produces Pinot noirs, Gamay, Zinfandel and other Red Wines with good structure, ripe berry, bright fruit and spicy characteristics.
