Yeast Lalvin EC1118 ORGANIC - 500g

Organic version of Lalvin EC-1118 (Prise de Mousse)™: ALL PURPOSE YEAST. Most widely used yeast by the kit manufacturers. All purpose yeast. Also called champagne yeast.

Lalvin EC-1118 is the original and is good for barrel fermentations. It ferments well at low temperatures and flocculates well with very compact lees. Under low nutrients conditions, Lalvin EC-1118 produces a lot of SO2 (up to 30 ppm) and as a result can inhibit malolactic fermentation. It is classified as a Saccharomyces cerevisiae bayanus.

Lalvin C - 500g

In white musts, it produces fresh, fruity, clean wines, and enhances varietal aromas. It maintains colour intensity in red wines. 

Lalvin C is a yeast for use in cool climate wines high in malic acid, cider, fruit wines, restarting stuck fermentations, and secondary fermentation in sparkling wines.

Very good compatibility with malolactic fermentation. Lalvin ICV OKAY has a very short lag phase, low nutrient requirements and alcohol tolerance to 16% (v/v).

Very low production of acetaldehyde. Selected in collaboration with the INRA, SupAgro Montpellier, the ICV and Lallemand for its ability to produce very low levels of SO2 and H2S. Furthermore, the low acetaldehyde production of Lalvin ICV OKAY® yeast is a great asset in helping to stabilize wines with low to moderate SO2 levels.

Lalvin RBS 133 - 500g

Lalvin RBS 133 has an optimum synergy with malolactic fermentation.

Reduces sensation of acidity and astringency in red wines with difficult conditions such as high acidity.

Wines produced by this yeast are described as having delicate fruity aromas such as cherry, wild blackberry, plum and ripe fruits. Floral characters such as wild violet, spice and vanilla have also been noted.

RBS 133™ has the ability to complement the fruity characters of such grape varieties as Sangiovese, Montepulciano, Barbera, Rabosa and Tanat, even in difficult conditions of low temperature, low nutrient content, high acidity and high alcohol level.

In North America, good results fermenting hybrid reds have been observed by winemakers.

Used in sequential inoculation with compatible selected Saccharomyces cerevisiae yeast, Biodiva will help to control development of wines aromatic complexity by favoring the perception of certain esters without overwhelming the wines.

This yeast can also be used in beer in the same manner as White Labs WLP603 Torulaspora Delbuekii in mixed fermentations to achieve high levels of phenols and ester production.
