(Strain L331)  Enhances varietal characteristics of Cabernet Sauvignon, especially aromas of blackberry, chocolate, and tobacco.  It improves tanning extraction and polymerization, increasing mouth feel and producing well-rounded wines. 

Highly suited to the fermentation of Cabernet wines; this yeast also has low volatile acidity production, generally less than 0.2 g/l, Low H2S and SO2 production

Best at 25º-30º C (77º-86ºF).

Fermivin MT48 Merlot (Formerly Cepage) - 500g

(Strain 4882)  Increases color extraction and varietal aroma concentration (berries, cherries, spices).  Winemakers who have tried this yeast have reported excellent results.  It is a popular red wine yeast.
 

Fermivin MT48 has a short to medium lag phase, rapid and steady kinetics and naturally low volatile acid production. Mouthfeel is enhanced by high glycerol production.

This yeast enhances aromatic notes of cherry, raspberry, blackberry, plum and spices in Bordeaux varieties, Fermivin MT 48 also produces excellent results on Sangiovese, Grenache and Tempranillo

Cepage Chardonnay 500g

Fermivin 3C was selected by Oenobrands. Fermivin 3C is a moderate fermenter, low foaming, and a low VA and H2S producer.

Recommended for barrel and sur lie aging; this yeast reveals citrus notes from norisoprenoids specific to the Chardonnay varietal. Releases mannoproteins during fermentation andaging. 

Known for finesse and aromatic complexity, expect intense, complex pear, acacia flower, lime tree blossom, citrus fruit and tropical fruit aromas. Round, elegant and with volume in the mouth.

Collection Cépage Syrah® has been selected to optimize the vinification of Syrah grapes.
 
This strain can be used from the start of pre-fermentation cold maceration. Strain LW 07 leads to the production of well rounded wines with superior mouthfeel and highly complex nose. The wines obtained are elegant, harmonious and have a supple tannin structure.
 
With hot climate Syrah, the strain gives strong, pleasing wines with concentrated blueberry and chocolate aroma.
In Syrah from cooler climates, the strain leads to concentrated fresh blackberry, raspberry and lavender notes.
 
The wines present a persistent finish of spicy pepper, liquorice and tobacco.
