Briess Victory® Malt. With an aroma of baking bread, Victory® Malt is well suited for Nut Brown Ales & other dark beers.

Briess Carapils is a trademarked dextrin malt. 1-5% adds foam stability, body, and palate fullness to beer and significantly enhances head retention. Although it appears darker than pale malt, it has a clear, glassy endosperm and does not contribute significantly to beer color or flavor. 1.5° L. 

Briess Chocolate Malt. The intense cocoa, rich roasted coffee and roasted flavors are a necessity for Porters and Stouts. Use in smaller quantities for a touch of flavor or color adjustment in all beer styles.

350 Lovibond.

Acidulated Malt (Best Malz)

BEST Acidulated Malt is used to optimize the pH in the mash when the water used for brewing is suboptimal. This leads to an increase in enzyme activity in the mash and thus a higher yield and improved flavor stability. The malt also produces a lighter color in the wort and balances the flavor of the beer. 

The amount used and its effect on the mash pH must be determined by means of preliminary tests. The pH of the wort and the beer is generally not reduced as the improved starch conversion results in more buffer substances being formed. BEST Acidulated Malt complies with the purity guidelines of the German Reinheitsgebot. 

Baird's Carastan is a British Crystal malt. Use up to 20%. It has a different flavor than American Caramel Malts and is

used in a wide variety of recipes. Stewed and then roasted at high temperature, which crystallizes the interior of each malt kernel. The result is a pale, brown-colored malt providing body, color and a sweet caramel/toffee flavor to beer. Also called Medium Cara Malt.

Honey Malt (Gambrinus)

A very versatile malt. The intense honey-like sweetness this grain imparts makes it a nice addition to almost any beer style. Has no bitter roast flavors, and does not add significantly to color.

Honey malt is the best description for European malt known as 'Brühmalz.' Its intense malty sweetness makes it a valuable addition to any specialty beer at up to 20% of the grist.

Grain Franco-Belges Caramel Munich 60L Malt

Highly modified, caramelized and slightly toasted. Contributes a rich malt aroma, caramel flavor, body, and a red-copper color to beer. Perfect for Abby ales and other dark or big beers.

Rauch Malt (Best Malz)

BEST Smoked is prepared over beech wood from the Franconian Jura Mountains and gives the beer a characteristic flavor reminiscent of smoked ham and bonfires. 

The malt is ideally suited to making both beer and whisky. The intensity of the smoked flavor depends to a large extent on the amount of malt used. We recommend 10% of the grain bill for a first application, increasing it to up to 100% depending on your preference. However, you should take into account that the overall smoky flavor usually only unfolds once the beer has been fermented and stored.

Baird Chocolate malt is used in the production of Porters and sweet Stouts. Chocolate malt has a rich chocolate and coffee flavour and aroma with a light astringency. Malted and roasted similarly to Brown malt but at higher final temperatures. Provides a rich dark color and roasted, sharp, burnt or astringent flavors, and intense chocolate and coffee notes.
