Sterling’s pedigree includes Saaz, Cascade, Brewers Gold, Early Green, and other European varieties. It was released in 1998 as a higher-alpha replacement for Saaz with improved disease resistance and storability.

Although primarily used for its exciting, pleasant aromatics, Sterling’s alpha acid levels can contribute in the kettle as well. A good choice for hop-forward lagers, Belgian ales, and other continental styles.

The flavours of Sterling are moderate and pleasingly “hoppy.” Prominent herbal quality reminiscent of Saaz, with flashes of candied citrus, sweet grass, bright spice, and dried hay.

Selected in 1961 and released in 1974 by the USDA, Comet was originally utilized for its high alpha acid content and adapability to growing conditions in the Yakima Valley. Commercial production ceased in the early 1980s in favor of newer super-alpha hops, however, Comet has made a recent comeback, finding favor with some brewers in dual purpose applications for its subtle and unique, "wild American" aroma.

Characteristic flavours of Comet tend to be Grapefruit, and "Cannabis-like" herbal notes. Originally intended to be a key bittering agent in American Lagers, recently craft brewers repurposed this hop for aroma, flavour, and dry hop applications.

Mosaic spiked in popularity immediately after its release due its incredibly pungent and unique character. With a genealogy that includes Simcoe as a mother, this hop has bursting citrus, pine, mango, and blueberry aroma. Great for bittering and aroma, this quickly became a favorite hop for single hop beers. Get your hands on this highly sought after hop while you can!

Whole cone hops are typically the preferred format for dry hopping as they maintain contact with the beer by floating, they are easier to remove than pellets and they add a unique character to the beer. Adding whole cone hops directly to the mash tun is also a great way to add some extra hop flavor and to clarify your wort as it filters through the flowers.
