Rate of use

For small batches: 3.75ml ( ¾ tsp.) / 12-15 L (3-4 gallons) for hard cheese or 2.5 ml (½ tsp.) /8 L (2 gallons) for soft cheese

For large batches: 12-15 ml/100 L for hard cheese or 6-8 ml/100 L for soft cheese
