    The most intense smoky character of Baird's peated range – Heavily Peated Malt is used to create some of the most smoke rich whiskies in the world. At the end of the germination process, the malt is then partially kilned and then the peat smoke is introduced for 65-70 hrs. This is the point at which the Peated Malt really takes on a unique character and what sets Baird's apart from others trying to match the traditional process that Baird has perfected over decades.

    Mash ready rye flakes will lend a dry, crisp character and a strong rye flavour. Can be used in amounts of up to 20% of grist total, but 5-10% is preferred. This is a pre- gelatinized flaked grain and does not require milling.

    Red X Malt (Best Malz)

    BEST Red X® has become synonymous with beers with a reddish color. It can be used 100% of the grain bill and is thus ready for use without the addition of further malts. BEST Red X® ensures, with the highest possible process reliability and optimum processability, that reproducibly bright beers with intense red colors can be brewed. Gives flavours of passionfruit and sherry. Adds a rich malty Munich-like complexity.

    For all reddish beers, ales, Alt, Dunkel and wheat beers. The malt was designed for beers with a starting gravity of up to 1.048 SG/ 12 Plato. For stronger beers, due to the higher original wort content, some BEST Pilsener malt should be added proportionally to the bulk to get back into the red range.

    Honey Malt (Gambrinus)
