Apollo is a specialized strain of Saccharomyces cerevisiae selected to produce fruit brandy - best for apple brandy. 

This saccharomyces cerevisiae strain is an excellent choice for rum production. It produces lots of esters of fig, licorice and other rich flavours. Interacts well with molasses and cane juice, bringing out their complex flavours in the resulting spirit.

This Saccharomyces cerevisiae is perfect for grain-based spirits that will be barrel-aged to add to the complexity of the spirit produced from the wash. It produces complex notes of dark fruits, and leather. This yeast is characterized as having fast and reliable fermentation, making it a great house whiskey strain. 

Red Star DADY (Distillers Active Dry Yeast) is a specially selected strain of Saccharomyces Cerevisae designed for distillers use in grain mash fermentations for ethanol. DADY will produce maximum alcohol yields under controlled temperatures (less than 90F/32C). It has been the choice of many producers in North America for over 20 years. DADY has been used in themanufacture of light spirit & Whiskeys. It is also used on corn mash & syrup fermentations. DADY is recommended for ABV productions lower than 15%.

Yeast Lalvin EC1118

Lalvin EC-1118 (Prise de Mousse)™: ALL PURPOSE YEAST. Most widely used yeast by the kit manufacturers. All purpose yeast. Also called champagne yeast.

Lalvin EC-1118 is the original and is good for barrel fermentations. It ferments well at low temperatures and flocculates well with very compact lees. Under low nutrients conditions, Lalvin EC-1118 produces a lot of SO2 (up to 30 ppm) and as a result can inhibit malolactic fermentation. It is classified as a Saccharomyces cerevisiae bayanus.
