PurePitch® Next Generation is designed to pitch at a rate of 7.5 million cells/mL per 5 gallons/19 liters, a commercially recommended pitching rate for standard ale ranges. PurePitch® Next Generation has an improved proprietary film designed specifically for White Labs and allows for one-way off-gassing to reduce product inflation and deliver higher yeast health and longer shelf life.
From England, this yeast can ferment up to 25% alcohol when used correctly. It produces ester characters that increase with increasing gravity. Malt character dominates at lower gravities. To achieve >25% ABV, sugar needs to be fed over the course of the fermentation.

Notice to brewers: This can be a difficult-to-use strain and White Labs recommends the following:
1. Needs heavy aeration. Aerate very heavily, 4 times as much as with a normal gravity beer. Less oxygen dissolves into solution at high gravity. Aerate intermittently during first 5 days of fermentation (30sec-1min).
2. Needs nutrients.
3. To obtain higher ABVs (16% +), pitch 3-4 times as much yeast. Add 2 times the normal nutrient level. Begin Fermentation with wort that would produce a lower alcohol beer (6-8%) and then add wort each day for the first 5 days (wort can be concentrated at this point).
