Apollo is a specialized strain of Saccharomyces cerevisiae selected to produce fruit brandy.
This strain provides a fast and efficient fermentation of up to 17% ABV. The resulting wash will provide a flavourful and complex distillate that successfully brings out the fruity notes.

Optimum fermentation temperature: 12°C-30°C
