Levuline ALS enhances the aromatic expression of white grape varieties.

Selected in Alsacian vineyards by INRA, France (Ref Eg8), both for its fermentation qualities and its potential for revealing the aromas of certain grape varieties.
 
This yeast reveals terpenes in wine through its Beta Glycosidase activity, and preserves varietal characteristics, while releasing flavours of Rose and Orange Blossom.
